A year ago I could not tell you one single thing about Bolivian cuisine, I didn’t even know such a thing excisted. But boy, was I missing out!

From saltena’s (like a meat pie) to Locro (stew), Choclo (white corn on the cob), Silpancho (very thin schnitzel type meat dish), soups, chicarron (fried pork) and many many more. Did you ever eat yucca, sometimes referred to as mandioca? Or catfish straight out of the river, cooked with cuttings from a tree that actually tasts like garlic? I don’t think I will find this tree growing in the city park in front of my house, but I am trying nonetheless to recreate all this wonderful Bolivian flavours here in my own kitchen.
